Favourite Tomato Recipes
Easy Tomato Soup
Serves 4, Preparation 10 minutes, Cooking 30 minutes.
Ingredients (what you need):
1 chopped onion
1 chopped carrot
1 chopped stick of celery
2 cloves garlic
750g (1½lb) quartered ripe tomatoes
400g (13oz) can of chopped tomatoes
1 litre chicken stock
Garnish (to make it look good)
Chopped basil and a drizzle of extra virgin olive oil.
Method (how to cook it)
1. Sauté the onion, celery, garlic and tomatoes in a little oil for 5-6 minutes.
2. Add the can of chopped tomatoes and chicken stock and simmer for 30 minutes.
3. Purée in batches in a blender. Season and serve garnished with chopped basil and a drizzle of extra virgin olive oil.
Lunch or dinner you can't go wrong with this favorite. A little crusty bread and you are in tomato heaven!
Bruschetta With Tomatoes
Serves 2, Preparation 5 minutes
Ingredients (what you need):
4 slices of Italian-style
white bread
Crushed clove of garlic
4 large, ripe plum tomatoes
A few torn basil leaves
2-3tbsp olive oil
2tsp balsamic vinegar
Salt & pepper
Method (how to make it)
1. Toast the bread and rub the slices with a crushed clove of garlic.
2. Combine the chopped plum tomatoes, torn basil leaves, olive oil and balsamic vinegar.
3. Season well, then spoon the tomatoes over each slice of bread and serve immediately.
A beautiful snack for a summer afternoon!
Greek Salad
Serves 8, Preparation 15 minutes
Ingredients (what you need)
6 firm ripe tomatoes, coarsely chopped
3 Lebanese cucumbers, coarsely chopped
1 red onion, sliced into rings
1 red capsicum, halved, deseeded, coarsely chopped
200g marinated Greek olives
220g marinated feta, coarsely chopped
1 tsp dried Greek oregano
1 tsp salt
125ml (1/2 cup) olive oil
60ml (1/4 cup) white vinegar
Method (how to make it)
1. Combine tomato, cucumber, onion, capsicum, olives and feta in a salad bowl. Sprinkle with oregano and salt.
2. Whisk together the oil and vinegar in a jug. Drizzle the salad with dressing and toss to combine. Serve immediately.
A delicious side-dish to go with your favorite meat, chicken or fish.
BLT - Bacon Lettuce and Tomato Sandwich
Serves 1, Preparation 5 minutes
Ingredients (what you need)
2 slices of your favourite bread (toasted, if you prefer)
1 lettuce leaf
2 or 3 slices ripe, juicy tomato
freshly ground black pepper
3 or 4 slices cooked bacon
Method (how to make it)
1. Arrange the lettuce and tomato slices on 1 slice of bread or toast and season well with pepper.
2. Top the tomato with the bacon slices and then the second slice of bread or toast. Press together gently and serve.
Optional - a little mayonnaise of your choice spread on the slices of bread or toast.
